Happy Monday! Hope you had a fun weekend. This weekend I was at the pool all day for swimming championships.
Summer is almost over but there is still time to make a last-minute treat. This week I was watching Rachel Talbott on YouTube. She made pink lemonade in lemons. I thought it was such a cool idea I would try it and share.
It is pretty simple and fun recipe. You need 10 lemons (I recommend getting extra just in case), 2 packages of unflavored gelatin and 2 cups of pink lemonade of your choosing. I used raspberry lemonade form Real Simple.

First you cut the lemons in half. I used a pairing knife and cut around the pulp. I made sure the keep the pith. I then used a spoon and scraped out the inside as best as I could. It is okay if you don’t get it all.


Next, cut the bottom of the lemon so it can sit flat. Be careful not to cut all the way through and make a hole like I did.
For the Jell-O add the lemonade and the two packages of gelatin to a pot and heat until warm but not boiling.

I would add sugar because the lemonade I used wasn’t sweet and when set didn’t have much flavor. Then transfer into something with a spout to make it easier to pour.
Pour the Jell-O in the lemons and refrigerate for 4-5 hours. Then cut off the extra lemon and cut into wedges. Enjoy a refreshing summer treat!
