Back to Basics: Red Velvet

Long time since I posted a recipe or a blog post. I really love blogging but at the end of the day I it is last on my to-do list. I am trying to get better and write posts when I am free.

My favorite all time cupcake has to be Red Velvet. Even though I am from the Northeast and it is a classic southern food I can always find room for a red velvet cupcake. It is my way of telling bakeries apart. A great bakery will have a most and chocolatey cupcake with a cream cheese frosting. Any other type of frosting would mean it is not true red velvet.

Update

Sorry I haven’t posted since Saturday. I planned everything out but I didn’t take in to account how much school work I would have. I really want to post more and consistently. I will now be posting on Friday and Sunday. Friday may not always be Friday favorites. I hope that it’s okay.  Last weekend I want to Baltimore to visit my friend at John Hopkins. Tomorrow there will be a post on my trip.

Friday Favorites: NYC, Central Park and More

I love living close to the city. I live Long Island about an hour away. It is great because I can go for a day anytime of the year. Last weekend my friends and I went to Central Park. This was my first time there. It is crazy because I have lived here my whole life but I haven’t done tourist stuff. One day I want to be a tourist of my own city. Anyway, we took the train to Penn Station and the 2 Subway to Columbus Circle.

Key Lime Pies!!


Hi everyone! I know it’s not my normal day to post, but I just made really cute key lime pies today and I wanted to share it with you!! image

I started off with the key lime custard… image

Made my graham cracker crust… image

(here’s the key lime juice I used! I got it at a farm stand on a recent trip to Florida) image

and finally….ta-daaaa!! Finished product!

Mini Key Lime Pies!   

Servings: 4-6

Ingredients:

Crust:

  • 4-6 graham crackers
  • 2-3 tbsp butter or margarine

Custard:

  • 1 c. granulated sugar
  • 1/4 c. flour
  • 3 tbsp. cornstarch
  • pinch of salt
  • 1 c. water
  • 3 egg yolks
  • 1/4 key lime juice
  • 1 tbsp. butter or margarine
  • (optional) 1 tbsp. lime zest
  1. Make the crust: melt butter and mix with crushed graham crackers (you may have to play with the proportions a bit). Press into individual ramekins, like I did, or one later dish (I don’t think it will be enough for a 9in. pie however).
  2. Mix sugar, flour, cornstarch, salt and water in a small-medium saucepan. Place over medium heat, constantly stirring, until the sauce thickens (you’ll know when it does!)
  • story time! I didn’t have cornstarch, but I know that confectioners’ sugar contains cornstarch, so I replaced 1/4 c. of the granulated sugar with confectioners’ sugar, and it worked!
  • more story time! I only put in 1 cup of water. Oops. It worked somehow!
  • 3.  Take saucepan off the heat and slowly stir in egg yolks (you can save the egg whites to make a meringue if you’d like!)
  • 4. Place saucepan back on low heat for 2 minutes, stirring constantly. Remove from heat and stir in key lime juice, butter/margarine, and optional key lime zest. Let cool slightly.
  • 5. Pour the custard into the pie crusts and chill until set (1-2 hours). Enjoy!!!
